3. Vegetarian Reuben

Hi! Me again. :D
I am kinda diggin this blog! It keeps my creative eyes/mind open and has me wanting to try alot of new things to share. One of my most favorite things to eat in life is a reuben . They are just soooo delicious. YUM! My husband and I have been vegetarians now for oh.. about 4 months. And I love it. But some foods I REALLY miss!! I rented some books from the library on vegetarian recipes and I found one, we tried it. We didnt really care for it, so I made my own version based very loosely off of that one. I cant remember the name of the book now, but next time i go to the library Ill check it out and get back to you... :D

So moving on ....

Can i just say...
I really love when i make something and its so awesome that people request it from me again. Especially when it comes to food. I love to cook/bake. And I love to share it with my family and friends. On Wednesdays my husband and I we have 3 of our friends over for a weekly dinner. Nothing super fancy just a get together and time to relax. I made these vegetarian reubens for them one time and they were a hit ! Tonight my husband requested that I make them again :D So I did! And now here I am to share with you so you can make them for your family and friends too !!!


What You Will Need :
1. 1 1/2 cups vegetable broth ( I use 1 1/2 cups water with 2 tsp better than bullion vegetable concentrate )
2. 1 tsp of soy sauce ( i use kikkoman low sodium )
3. 1 1/2 tsp of garlic powder
4. One whole package of Morningstar Farms veggie bacon strips
5. Rye Bread
6. Swiss Cheese
7. Sauerkraut ( optional )
8. Thousand Island Dressing

Instructions:

1. First you will pre-heat the broiler  ( And this is kind of really important because if you dont the bread will be soggy >:(  )

2. In a deep pan add together the vegetable broth, soy sauce and garlic powder - stir and let come to a boil. When it starts boiling add the bacon strips and cook for about a minute minute and a half and then flip and cook for same time.



3. Arrange the Rye Bread on a cookie sheet - ( i do mine horizontally in 2 rows ) And when the strips are done take them out and place 2 or 3 on the bread. 


 4. Add cheese to each piece - unless you are going to make them into not an open face sandwich. Then only add cheese to half.



5. If your going to have sauerkraut add it in the broiler while these are cooking. If you dont make 8 you can place it right on the same cookie sheet. Make sure its drained.

6. Toast till done. I like my cheese nice and bubbly!

2. Straight Edge Salad

Hi there :D

So sorry for the lack of postage on here. Such a terrible way to introduce my blog !! But this has been a super duper busy month, My birthday was the beginning of the month, then my husband and I celebrated our 6th wedding anniversary! And then my best friends from Michigan came to visit me for a few days, then I ended up going home with them for about 4 days..!. Whew! Let me tell you. That was so an awesome surprise. I had NO idea!! Now Im back and im ready to get blogging.

On July 17th was 'Money in the Bank' a WWE Wrestling pay-per-view. Its a tradition for us to have a little get together with our friends and we make food and just hang out and watch wrestling ! Its really a good time. My husband T told me that he'd like to make a special salad for his favorite wrestler CM Punk! So we made the 'straight edge salad' It has green and purple lettuce with spinich , cucumbers, chickpeas, radishes, morningstar farms grilled chickn' strips, cheese, snow peas, and. Oh and of course Croutons! This salad was soooo good if I do say so myself! Please mind my lack of pictures, im stilll new at this and alot of them were not so good...
